2007 Cakebread Cellars Cabernet Sauvignon, Napa Valley

2007 Cakebread Cellars Cabernet Sauvignon, Napa Valley

This is a fantastic, full-bodied, “Special Occasion” wine that can be found in your local, larger liquor and wine shops.

*Straight out of the bottle: This wine was tasting excellent straight out of the bottle. It was very fruit forward, surprisingly smooth, and provided nice velvety tannins that added nice structure.

Because the wine seemed a bit tight, we decided to let the wine sit in the decanter throughout dinner.

*Decanted: As this wine had a chance to oxygenate and “air out”, it became extremely enjoyable! 2007 has proven to be an excellent vintage year for Napa Valley, and this wine solidifies this. It was very fruit forward and provided hints of cream, vanilla, and anise. It is a big, full-bodied characteristic Cabernet Sauvignon that is sure to win you over (if you’re into BIG cabs!)

This merlot was VERY full-bodied and was had a profile very similar to a big cabernet sauvignon. Definitely enjoy this wine with a good cut of red meat!

Tasting Notes

*Straight out of the bottle: This wine was very “tight” and definitely needs some time to mellow out in a decanter. As described above, this wine was very ‘cabernet sauvignon like’ in that it was full-bodied and full of power. It was very dry with hints of oak and provided an almost old-world earthy finish.

*Decanted (About an hour): This wine is fantastic with some time in the decanter! While it did mellow out quite a bit, its flavor profile expanded to include fresh cream, bright red fruit, tobacco, and cloves, with a nice oaky undertone. It was very fruit-forward and with time became less dry and more in alignment with the traditional Merlot that we have all come to love and enjoy. It is very well balanced and envelops the palate in lush, juicy flavors.

This is a special occasion wine that is sure to get better with time and please all who enjoys big full-bodied red wines!

While this zinfandel wasn’t a favorite of ours, it may do well with some time in the bottle.

*Straight out of the bottle: This wine envelops the palate in a nice buttery overtone, followed by a hint of spice, and red fruit. This wine is on the lighter side and didn’t really carry a lot of depth. Additionally, it procured an unsavory, bitter aftertaste that left little to be desired.

Due to it’s lighter body and simpler wine, we decided not to decant this wine.
